For the Pork & Marinade:

  • 500g pork belly or pork shoulder, thinly sliced

  • 1 onion, sliced

  • 1 carrot, julienned

  • 4-5 green onions, cut into 2-inch pieces

  • 1 tbsp cooking oil

For the Spicy Sauce:

  • 3 tbsp gochujang (Korean red pepper paste)

  • 2 tbsp gochugaru (Korean red pepper flakes)

  • 2 tbsp soy sauce

  • 1 tbsp minced garlic

  • 1 tbsp grated ginger

  • 2 tbsp rice syrup or honey

  • 1 tbsp sesame oil

  • 1 tbsp mirin or rice wine

  • 1 tsp black pepper

  • 1 tbsp toasted sesame seeds

Instructions:

  1. Prepare the Sauce:

    • In a medium bowl, whisk together all sauce ingredients until smooth

    • Adjust spice level by reducing or increasing gochugaru

  2. Marinate the Pork:

    • Add thinly sliced pork to the sauce

    • Mix thoroughly until all pieces are well-coated

    • Let marinate for at least 10 minutes (or up to 2 hours)

  3. Stir-fry:

    • Heat oil in a large wok or skillet over high heat

    • Add the marinated pork and spread it evenly

    • Cook without stirring for 1-2 minutes to sear

  4. Add Vegetables:

    • Flip pork and add onions and carrots

    • Stir-fry for 2-3 minutes until pork is cooked through

    • Add green onions and chili in the last minute

  5. Serve:
