Sesame Cucumber Salad within 5 minutes
"When you need a lightning-fast side dish that's packed with flavour, this Sesame Cucumber Salad is the answer. It's cool, crunchy, and slightly tangy—the perfect complement to any rich or spicy main course. It’s my secret weapon for making a simple meal feel special."
Ingredients:
1 large cucumber, thinly sliced
1 tbsp rice vinegar
1 tsp soy sauce
1 tsp sesame oil
1/2 tsp sugar (or honey)
1 tsp toasted sesame seeds
Optional: A pinch of red chilli flakes for heat
Instructions:
In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, and sugar until the sugar dissolves.
Place the sliced cucumbers in a medium bowl.
Pour the dressing over the cucumbers and toss gently to coat.
Sprinkle with toasted sesame seeds (and optional chilli flakes) before serving.
💡 Pro-Tip: For the best texture, serve immediately! If you need to make it ahead, keep the dressing separate and toss it with the cucumbers just before eating to keep them perfectly crisp.
